What's For Breakfast? Ham and Pepper Quiche Recipe


I love quiche. As a kid I thought it was the perfect food. And that's probably not far from the truth even now. When we had our Easter potluck brunch last month, my friend Erin brought quiche to share. I was so excited and after the party I penciled it into our daily meal plans for our family. Here is a simple recipe that I'd like to share with you. Try it, you won't regret it:


Ham and Green Pepper Quiche

1 premade unbaked pie crust/shell
1/2 cup of milk
1/2 cup of light mayo
4 eggs, lightly beaten
1/4 cup of cooked onion
1/4 cup of green peppers
1/4 cup of ham
8 ounces of shredded cheese
Salt and Pepper to taste 

Preheat oven to 400 degrees F (200 degrees C). Lightly grease a pie pan or glass pie dish. 

In a large bowl, whisk together mayonnaise and milk until smooth. Whisk in eggs. Layer green pepper, ham, onions and cheese in pie crust, making several layers of each. Pour in egg mixture.Sprinkle any extra cheese on top if desired. Cover quiche.

Bake in preheated oven for 45 minutes. Remove the cover and bake 10 minutes or until top is golden brown and the filling inside is firm.
