I am learning this more everyday. Simple, Amy, keep it simple. Little man will be more than happy with simple. So this is what we were up to today...<br />

I had a leftover bag of rice that was getting old so I thought it might be fun to play in. So I gathered my tools. They just so happened to be two plastic bowls, two measuring cups, two fun kitchen utensils and a bag of rice.<br />

I put a table cloth down on the kitchen floor and set the supplies on top and poured the rice in a plastic bowl. Then I brought Noah in and let him play. And play. And play.<br />

I could do it to save money--Korea is the land of morning calm, but it’s also the land of charging 3x the import price for baby items! I could do it so I won’t have to make midnight runs to the convenience stores--the Hubs likes that ones! I could do it for the environment--I wanna do my part and I’m starting to do what I can. But that’s not why I cloth diaper. I do it because of all the cute prints!<br />

I can’t even remember the first time I talked about cloth diapering, but I think it has always been a thought in the back of my mind…you know, for that “some day” when I got pregnant. And then I did get pregnant and I had to really consider what kind of diapering system we would have. Like I said, there were several good reasons to choose cloth over disposable, but I had no idea what I was getting myself into when I chose cloth.<br />

The Hubs and I became pregnant in Fall 2010 and started working at ICS Pyeongtaek, South Korea the same year. We’ve been here for some time before, so the move wasn’t a huge adjustment. Soon we started befriending the other families in the faculty with small children and we found a lot of cloth diapering mommas as well. They showed me their diapers and all the new gadgets and gizmos of CDs today.<br />
<br />
It’s not a “cloth and rubber shorts” world anymore! Now there are a variety of choices, including easy-to-wash pocket diapers and “old fashion” cloth with cute covers. </div><b></b>Pocket diapers are exactly what they sound like. There is a pocket opening between one layer of microfleece (wicks the moisture off of baby’s heiny!) and PUL (waterproof material with a pretty print or color on the front). In the pocket you insert an absorbent, washable pad. There is even room for more than one if you have a super-soaker child. ;) These are the easiest diapers to use because they are assembled just like a disposable. They are soft on baby’s rump, adjustable around the waist and fun to look at. MY favorite is HipKiddo from Canada.<br />

The biggest improvement for these cloths is that we don’t have to use diaper pins anymore. There is a stretchy blue thing in my pictures that is called a Snappi and it holds the cloth part in place really well. (The cloth is thick enough that the grippers on the back of the Snappis never touch baby’s skin.) So, just like when I was in cloth as a kid, fold that cloth part around baby’s bum and attach the Snappi.<br />

The waterproof layer is the next big improvement. Instead of those ugly, giant plastic panties, now there are tons and tons of cute, fashionable, leak-proof covers. The cover goes over the cloth just like a disposable diaper. They are adjustable around the waist as well. The cool part is that you can reuse the covers without washing them every single time, (as long as they aren’t soiled) so you get a lot of mileage out of them! MY favorite Cover is Thirsties Duo Wrap.<br />

Now that I’m head-over-heels in LOOOOOVE with fluff, (that’s the new lingo for cloth these days) I’m so glad that I made this choice. My initial reasons weren’t great, but now I enjoy diaper rash-less baby booty, a good choice for the environment, sleeping in the bed instead of running out the get diapers and I thoroughly enjoy hanging my diapers to dry! I absolutely love all the colors!<br />

- 3/4 Cup honey<br />
- 1/2 Cup peanut butter<br />
- 1/2 Cup Brown sugar<br />
- 1/4 Cup neutral oil of some sort<br />

Mix all ingredients except the granola on medium heat. Cook it until the mixture starts to bubble and it is well blended. Stir it continuously while on the burner.<br />

Place the square dish in the refrigerator for two hours or more. Let sit at room temperature for 10 minutes before slicing. Cut in slices and if it lasts longer than five minutes store the rest in a container in the fridge.<br />

6 cups of rolled oats<br />
2 cups of any kind of seeds or nuts (I used 1/2 cup sesame seeds, 1/2 cup almonds and 1 cup peanuts)<br />
1 cup of dried fruit (I used raisins, but you can use any dried fruit)<br />
1 tsp Cinnamon<br />
1/2 cup of honey<br />
1/2 cup of peanut butter<br />
Pinch of salt<br />

Pre-heat the oven to 350 degrees.<br />

First pour the oats in a large bowl. Chop the nuts and add the nuts and seeds to the oats. Next add cinnamon and salt. Stir together.<br />

This is the only tricky part about this. You need to bake this for 30 minutes, but here is the catch: You need to stir this every 5 minutes. If you don't your peanut butter will burn. Believe me, I learned this the hard way.<br />

Once out of the oven, let it cool and store in a ziploc bag in your refrigerator. This will keep well for a week or two. Eat it like cereal in milk, add it to a yogurt parfait, the ideas are endless. As long as you enjoy it.<br />

Whole Wheat English Muffins<br />
A Slice of Ham, Bacon or Sausage<br />
1 Egg<br />
1 slice of cheese<br />

Preheat your oven to 350 (176 C) degrees. Take a Muffin tin and lightly butter or oil each spot. Crack an egg in each tin for the number of people you are cooking for. (Idea: Fill it up and freeze the extra sandwiches!) Put in the oven for 15-20 minutes. While these are cooking place your English muffins (open them up) and place them on a cookie sheet. When the eggs have been in for 10 minutes add the cookie sheet of muffins in the oven. Cook bacon, ham or sausage on the stove while you are waiting. When your done with these steps take the english muffin add one egg, one piece of meat and then your sliced cheese. Then stick them back in the oven for 5 minutes to melt the cheese and enjoy!<br />
<br />
To freeze them put them on a cookie sheet in your freezer for one hour uncovered. The take them out and wrap them in foil individually and then place them in a freezer safe gallon Ziploc bag. Then take them out when your ready to eat them and put them in the over for 20 minutes and enjoy!<br />

He is not interested in the things he used to be interested in and he is not quite old enough for many other activities I think of for him. So I have been spending a lot of time coming up with new things for him to do. This was one of our activities today:<br />

I am making a "little man" drawer in my kitchen of things he can play with while I am cooking or cleaning the kitchen. I have things like pots and cooking utensils in there. Eventually I will add play food as well. I came up with what to put in his drawer by watching what caught his eye as I was cooking and cleaning. One of his favorite things is to get into the different spices that I have. I had a few that had expired so I thought I would make a spice container that would be fun and safe for him.<br />

First I dumped the old spice and cleaned the containers really well. Then I took the labels off.<br />

When all was said and done my little man was pretty happy. He enjoyed shaking these and stacking them. In Japan, powdered sugar is a ridiculous price and I was dreading going to the store to buy it. I looked up different frosting you could make without powdered sugar and there wasn't a recipe to make what I was looking for. Then I had an idea. What is powdered sugar? It is just really fine regular sugar. So, I decided to put some sugar in a blender. And it worked! Beautiful fluffy powdered sugar. Just what I needed! So if you're ever in a situation when you need powdered sugar and you don't have it, or you just don't want to pay for it here is how you make it:<br />

I spent most of my time trying to entertain a grumpy 14 month old because he couldn't go outside. It was pouring rain for days. And my son thinks everyday should be a day to play outside. So a worn out mom and a cranky son was not a good combination. So we began trying all kinds of things to keep my little man happy.<br />

We tried crayons for coloring. <i>He ate them.</i><br />
We tried stacking blocks. <i>He was entertained for a grand total of um, 30 seconds and then he threw them.</i><br />
We tried reading books. <i>Another ten minutes of fun. Then it was over.</i><br />
We tried edible play dough. <i>Um, not really interested mom.</i><br />
I was at a loss on what I could do to keep him busy.<br />

Until I talked to my creative sister-in-law and she gave me a very good idea. This is what she came up with:<br />

I put a large plastic tablecloth on the floor and put four tablespoons of yogurt in different places. I then put a drop of food coloring in each one. My son looked at me as if I was crazy putting food on the floor and slowly took steps towards the setup on the floor. He looked at me and then stuck one finger in it to see if I was going to tell him no. When I didn't he started laughing and spreading it all around. <br />

I love quiche. As a kid I thought it was the perfect food. And that's probably not far from the truth even now. When we had our Easter potluck brunch last month, my friend Erin brought quiche to share. I was so excited and after the party I penciled it into our daily meal plans for our family. Here is a simple recipe that I'd like to share with you. Try it, you won't regret it:<br />

1 premade unbaked pie crust/shell<br />
1/2 cup of milk<br />
1/2 cup of light mayo<br />
4 eggs, lightly beaten<br />
1/4 cup of cooked onion<br />
1/4 cup of green peppers<br />
1/4 cup of ham<br />
8 ounces of shredded cheese<br />
Salt and Pepper to taste<span class="plaincharacterwrap break"> </span><br />

<span class="plaincharacterwrap break">Preheat oven to 400 degrees F (200 degrees C). Lightly grease a pie pan or glass pie dish.</span><span class="plaincharacterwrap break"> </span><br />

Layer green pepper, ham, onions and cheese in pie crust, making several layers of each. Pour in egg mixture.Sprinkle any extra cheese on top if desired. Today I had lettuce that I had grown. I planted it, continued to water it, cut it off the plant and then enjoyed eating it. And it really made me feel good partly because I had saved my family money and partly because I did it, I actually grew something and it worked. <br />

I have always wanted to have a garden of my own since I was married but we have never lived in a place where we have land that we could garden. Now that we live in Japan and have no yard at all I had pretty much set that dream aside for now. That is until I came across an article about potted gardens. I was immediately set on trying it. So my son and I went to the store and purchased everything we needed for a fun day outside in the dirt. A few weeks later we are enjoying fresh lettuce from our garden and also enjoying NOT paying for it from the store:)<br />

Starting a vegetable garden is actually pretty easy and you really can grow almost anything you would grow in the ground in a pot. Carrots, Lettuce, Tomatoes, Herbs, Peppers, Cucumbers, etc. are all vegetables that can be grown in this type of garden. First you will need to choose a pot. Remember when choosing a pot you will need to have proper drainage so make sure you pick a pot that has this. <br />
<br />
If you want to grow the vegetables from seeds you can. Just purchase your seeds and grow them in small containers like a milk carton. Once they are small plants you can transfer them to your larger pot. If not, you can also purchase already started veggie plants from your local garden center.<br />

When your ready to plant you vegetable plants make sure you put a layer of rocks at the bottom and then the soil. This helps prevent the roots from rotting. Then plant your plants and give them some water and watch them grow! You can also purchase vegetable plant fertilizer to help them grow larger and faster.<br />

Yes, much better. A friend of mine gave me a jewelry box and this is what inspired the organization of this area in the first place. So much easier to find things. Then I just took some thumb tacks and put them in the wall to hang my longer necklaces. Aw, so much better, this was such an easy project but it will make all the difference. I know technically it's Sunday this week that I am getting this up, but I'm still going with the name because next week (hopefully) it will become a my Friday thing.</b><br />

So, it's that time of year again. Sunscreen, tote bags, sand, surf and sun. And of course that also means one other thing: bathing suit shopping. Sigh...I remember when it was so easy to go find a suit at sixteen. Pretty much anything I tried on fit. I could be done with bathing suit shopping in about 10 minutes. Well, one child later it's not so easy anymore. And I am positive that I am not the only mommy out there dreading the days search for a bathing suit.<br />

When I start my bathing suit shopping adventure each year I always go in with a plan. I usually spend some time searching the internet to see the trends and styles for the year and figure out what I like and what I don't. This year, I put together a few picture charts of some options put together. I really do think it's easier and much less overwhelming going in with a plan. Do I always stick with the plan? Of course not, but it's a place to start and I usually go in the store confident that I can put together something that looks good. Never. Until last night. I was making one of our favorite family recipes, sweet and sour chicken. It is an amazing dish and I get excited to eat it the morning before I make it. Yes, it's that good. The only problem is it takes an hour and a half to make and while it is baking you have to turn it every fifteen minutes. So this is how it went down:<br />

I put the chicken in the oven. Fifteen minutes go by, I flip the chicken and stir the sauce. Done. So far so good. Fifteen more minutes go by. Same thing. Then I hear my little guy waking up. I pick him up and he immediately wants dinner. I make him dinner, feed him dinner, clean him up and then realize he has a dirty diaper. So what does any good mom do? Why, change it immediately of course. This is about the time my hubby comes home and lets me know that it seemed a little smokey in the house. Yep, he was right. </div>So, diving into my daily readings in the blogger world today I noticed a trend on a few of the mom's blogs today. A lot of them posting things like "Are you ready for this year's Mom's Nite Out?" or "Looking forward to National Mom's Nite Out!" These postings intrigued me. A night out where mom's unite and spend an evening for themselves? Wow! What a concept! I love it!<br />
<br />
I want to just stop for a minute and let you know how important it is to have time for yourselves as a mommy. I know it can be very easy to get consumed in your role as mother and as wife and forget you have needs of your own. We are still individuals and you don't morph into this 24/7 all the time mommy super hero. To be better wives and mothers it is important to have these moments. (I am still learning this as well, my son is almost 14 months old and I have yet to have a girls night out, so I am saying this for you as well as me)<br />
<br />
Anyway, back to the night out thing. It's on May 5th and basically the only requirements are to do something you want to do for yourself. (Have I mentioned I really like this idea?)<br />
<br />
Here are some ideas on how you can spend your night out?<br />
<br />
*Schedule a manicure, pedicure, facial or massage. Nothing is more relaxing than that.<br />
*Do something you absolutely love without interruptions- read a book or magazine, finish that scrapbook you have been working on, watch an ENTIRE movie in one sitting(gasp! is that even possible?!?)<br />
*Go shopping, alone or with friends.<br />
*Dinner out with the girls or maybe even by yourself!<br />
<br />
Even if you can't go out on May 5th try to find a night that fits your schedule and give yourself a night to relax. Sounds great doesn't it?<br />
